Chef Notes

The organic farm at the hotel provides 10% of the produce for the restaurant.
The cook staff totals 54, almost all men.
The staff work at least 12 hour days, as we saw the same people at breakfast and dinner.
They have offered the "chef experience" that we enjoyed to one couple per night almost every night for the past 3 months.
Preparations for breakfast begin as soon as dinner ends.
The chef spent almost 4 hours of his day with us, in addition to keeping the kitchen running smoothly---and never a sign of stress.
Cinnamon Lodge just received honors as the #1 five-star hotel in Sri Lanka. We have to believe that is due in a large part to the restaurant.
